5 Star Zucchini Bread

3 Eggs

1 cup vegetable oil

2 cups white sugar

2 cups graded zucchini

2 tsp vanilla extract

3 cups all purpose flour

3 tsp ground cinnamon

1 tsp baking soda

1/4 tsp baking powder

1 tsp salt

1/2 cup of chopped walnuts (optional)

Directions

1) Preheat oven to 325 degrees F (165 degrees C) Grease and flour 2 six inch loaf pans

2) In a large bowl, beat eggs until light and frothy. Mix in oil and sugar, sitr in zucchini and vanilla. Combine flour, cinnamon, soda,baking powder, salt and nuts; stir into the the egg mixture. Divide batter into the prepared pans.

3) Bake for 60-70 minutes or until done. I wait for the tops to crack open.

4) Cool and serve!
