Love apple cake (tomato cake)                                            1 cup evaporated cane sugar

2 1/2 cups roughly chopped ripe tomatoes                          1 eggs

1/2 cup chopped dates                                                            whipped cream topping                                                            

1/2 cup golden raisins                                                              Preheat oven to 350 F, thoroughly grease or spray a 9x14 cake pan

2 cups of white whole wheat flour                                           1) puree tomatoes 2) push through mesh screen to remove skins & seeds

1 tsp of baking soda                                                                 3) stir in dates and raisins and set aside 4) in medium mixing bowl combine flour, soda, salt, cinnamon &

1/2 tsp salt                                                                                        nutmeg 5) in large mixing bowl beat together the butter & sugar

1 tsp cinnamon                                                                           6) beat in the egg mixing until well creamed 7) add the dry ingrediants mix well

1/2 tsp nutmeg                                                                            8) Stir in fruit until well mixed 9) pour into cake pan bake 45 min or until tooth pick comes out clean

2/3 cup unsalted butter                                                                    add whipped cream.
